There are times for healthy makeovers and there are times for pure indulgence. Today, it is time for the latter.
These cupcakes are one of the deadliest things to come out of my oven.
Sweet,
light and easy to make, you will enjoy every delicious bite. They have
that "wow" factor that makes them perfect for a get together or party.
I brought these with me for Easter and they were gone before Peter Cottontail hopped the bunny trail. :)
The combination of strawberry and lime is a true winner and is very reminiscent of sitting on a warm beach, sipping cocktails.
Lime Daiquiri Cupcakes with Whipped Strawberry Frosting (Makes 24 Cupcakes)*

Cake
1 box white cake mix (I used Duncan Hines French Vanilla)
1 1/2 cups limeade**
3 egg whites
2 tbsp oil
green food colouring (about 6-7 drops)
1/4 cup rum (optional)
Icing
1/4 cup shortening
1/4 cup butter, softened
1 tsp vanilla
1/2 cup strawberries, pureed
2 cups icing sugar
1 tbsp meringue powder
Preheat oven to 350 degrees and line two muffin tins with cupcake liners
Combine cake mix, limeade, egg whites and oil. Beat (with stand up or hand mixer) until light and fluffy (about 2-3 minutes).
Divide batter evenly, filling each cup about 3/4 full. Bake for 18-20 minutes or until an inserted toothpick comes out clean.
Using toothpick, poke holes in cupcakes and brush each one with rum, if desired. Allow to cool for 15 minutes.
For
the icing, cream shortening, butter and vanilla. Add strawberry
puree. Slowly add in icing sugar and meringue powder and beat until
smooth and creamy (about 3 minutes).
Frost cooled cupcakes using a decorating bag (or plastic bag with a cut tip). Garnish with drinking straw.
*I actually divided my batter and made 12 cupcakes and one 9-inch round cake. The recipe could also be easily halved.
** If you don't have limeade, combine 1/2 cup lime juice with 2 tbsp of sugar and 1 cup of water.
