No-Bake Date Peanut Butter Balls

Dates and peanut butter is one of my most favourite combinations for smoothies, so I thought that the duo would make some delicious bite-sized treats.

I was right.

It is hard to even call this a recipe, they are so easy to make. When you are looking for something sweet, these really hit the spot.  They also happen to be vegan and gluten free.  A winning combination in my books.

I wanted to add some powder to amp up the protein content, but I only have cookies and cream protein powder and I didn't think that flavour combo would work. Next time for sure.

No-Bake Date Peanut Butter Balls (Makes 40 Balls)
Adapted from my Crispy Peanut Butter Balls

1 cup pitted dates
1/2 cup natural peanut butter
1 tsp vanilla
1/2 cup oat flour*
1/4 cup ground flaxseed
1/4 cup optional add-ins**

Line a cookie sheet with parchment paper.

Cover dates in boiling water and allow to soak for 2 minutes.  Drain excess water and mix in a blender until it forms a paste (You could also do this by hand, but it was not be as uniform or smooth).  Add peanut butter and vanilla and mix until incorporated.

Stir in oat flour and ground flax.  (If mixture seems too wet add more oat flour.  If it is too dry, add more date paste.  You could also chill dough for 15-20 minutes before rolling into balls).

Roll into 1 inch balls and place on cookie sheet.  Refrigerate for 30 minutes.  Store balls in an airtight container in the fridge.

*Make your own oat flour by grinding whole oats in a coffee grinder.

**Add-ins could include plain or vanilla protein powder, raisins, nuts, seeds or whatever else you have on hand.
