They are raw, vegan, gluten-free, super easy to make and worth definitely repeating. Perfectly portable and absolutely yummy, these would make a great addition to any party table.

Raw Coconut Date Squares (Vegan, Gluten-Free, Makes 16 Squares)
Filling
20 pitted dates
1/2 cup boiling water
1 tsp vanilla
Crust
1 cup oat flour
1/2 cup almonds, ground
2 tbsp vegan margarine (you could also use butter, but they would not be vegan)
2 tbsp maple syrup
Topping
1/2 cup oats
1/4 cup unsweetened coconut
pinch of salt
1 tbsp margarine
1 tbsp maple syrup
For the filling
Soak dates and vanilla in boiling water for 2-3 minutes. Drain excess water and mash with a fork.
To make the crust
Combine oat flour and almond flour. Add margarine and maple syrup. Stir mixture until it comes together to form a ball.
Press into an 8x8 pan (it will take up about 3/4 of the pan) or form into a flat square on a piece of waxed paper.
For the topping
Mix oats, coconut, salt, margarine and maple syrup to form a crumbly mixture.
To assemble
Spread date mixture evenly on to crust. Sprinkle on topping and refrigerate for an hour. Cut into squares. and enjoy!
