What is besan, you may ask?
It is chickpea flour! (Also known as garbanzo flour or gram flour).
Last week I bought dry roasted chickpeas and had absolutely no idea what to do with them. I did a little bit of surfing and found some amazing uses for besan such as Besan Laddu, Besan Chilla and this fantastic recipe for Besan Banana Bread.
I tackled banana bread not to long ago, but was itching to try it with the chickpea flour. I ditched the oil and opted for yogurt then, added flax for fibre.
The result was a very yummy and dense bread that would be a perfect compliment to your morning coffee. I was pleasantly surprised that the chickpea flour worked so well in a sweet dish.
I used my breadmaker for this recipe, but you could easily bake in a greased loaf pan at 350 degrees for 40-45 minutes.
Besan Banana Bread (Makes 12 slices)
1/2 cup vanilla yogurt
2 eggs
2 tbsp skim milk
1 banana, mashed
1 tsp baking soda
3/4 cup whole wheat flour
1/2 cup chickpea flour
1/3 cup ground flax
1/4 cup wheat bran
1/2 tsp baking powder
1/2 tsp salt
1/2 cup sugar
Place ingredients in the breadmaker in the order listed (or as directed by your particular machine). Set on the Quick Bread Cycle or Sweet Bread Cycle.
Remove from pan and place on a cooling rack.
